Located within an hour's drive of Brindisi is the historic town of Martina Franca, one of the stars among the historic "white" towns of the Itria Valley. Martina Franca's patron saint is St Martin, whose statue one comes across frequently on a stroll through the historic centre. His most prominent depiction is the bas-relief that graces the facade of the 18th century Basilica di San Martino, the basilica erected in his honour, and the town's main church. It overlooks Piazza Plebiscito. Nearby is another beautiful church, the Church of San Domenico, which was also erected in the 18th century. Its facade and interior are breathtaking in the detail that has gone into the church's rich decorations.

Martina Franca is also home to many trulli, the white-washed round buildings that are topped with conical, pointed roofs, one of the Itria Valley's traditions. However, the narrow lanes in the historic centre of Martina Franca are mostly lined by taller Baroque buildings from the 18th century, among them a few mansions that belonged to local aristocrats. Decorated with ornate archways and balconies, these mansions tell of Martina Franca's erstwhile importance in southern Italy.
